The plan is to migrate to e/os on a pixel 8.
I have a small number of apps for which I paid a one-time fee via play store - some were quite pricy. Will there be a way to restore these apps once e/OS is installed?

i am not in this case,
but i think better is to download these apps .APK using your current GogolOS and save them to your PC to try to reinstall them later on your /e/OS.
does someone have already experienced that option ?
I guess it will depend how the app ensures that you have paid for it but I have little direct experience except UK Ordnance Survey charges for maps and payment is proved outside Google, as opposed to an enforced “in app purchase”.
You might search 
top right of forum pages for the apps you have … some will probably report on the experience on /e/OS.
