Any phone that had eSIM functionality on stock Android will have eSIM functionality on /e/OS (if there is an /e/OS build for it).
Even for older phones that don’t have eSIM functionality built in, you could get an eSIM adapter - basically a writable physical SIM card - to load and use multiple eSIMs, adding the functionality where it didn’t exist before. (You will likely also need a USB eSIM writer, too.)
In any case, Samsung is now a bad choice for using with a custom ROM; search for “samsung VoLTE” in these forums and you’ll see why.
