Hello, it’s already been several times that i am looking for an alternative OS for my old Galaxy tab SM-T365, that is no longer updated for a long time (Android 5…). Do you know if there is a build /e/ for this model?
Otherwise I want to do it myself which documentations you will advise me?

Searching the web, I cannot find any custom ROMs for this device. There definitely is not an /e/OS build for this device.
/e/OS is based on Lineage OS, and the first step to getting an /e/ build for this device would be to create an unofficial Lineage OS build. That is a pretty big job and, even for an experienced ROM developer, would take a lo of time and effort, and may even prove to not be possible.
Realistically, that is not going to happen. Sorry
