Build the /e/OS rom with custom app

i want to build /e/OS rom with a prebuilt apk. should i just add -e "CUSTOM_APPS= myApk.apk" to docker build command? and how can i do this if i want to build rom without docker.
what other build options do we have except CUSTOM_APPS and MINIMAL_APPS?
