Can I dual boot my phone with /e/ and android

You mean Android/e/OS and/or Android/Gogol/OS
I am afraid you cannot have this dual boot.
A/B slot device only can install a new update of the same OS on the second slot for testing it and allow to come back to previous version in case of problems with the new one.

Thank you. I am still not 100% concinced I want to make the change but perhaps I just need to take the plunge!!!

This is not an intended use

There is a workaround for something like daily switching between different OSes but not exactly like Dual Boot on a PC :

Unlocking the bootloader will erase installed apps and personal data…

BUT,

when that is done, and TWRP installed,
you can save your useful partitions for the first OS with the TWRP backup feature.
wipe the needed partitions and install a second OS.
save your useful partitions for the second OS with the TWRP backup feature.
wipe the needed partitions, and install a third OS
save your useful partitions for the third OS with the TWRP backup feature.
etc…
etc…

When you want to switch :

you have to backup the actual state ( or not if there were no interesting changes ), wipe the needed partitions and restore the useful partitions with the TWRP feature
