The apps for public transportation are usually tricky. For example: The DB Navigator app (Deutsche Bundesbahn) shamefully disregards the privacy and data protection of its passengers. Mike Kuketz Blog (German only), a data protection professional, calls the DB app “DB Schnüffel-Navigator”. Mike Kutetz and consumer protection organizations such as Digialcourage
have filed a lawsuit against this in court. It will be a long time before a verdict is reached and until then passengers will continue to be spied on.
You won’t be able to use both cameras with a custom ROM and custom camera app like /eOS to the same extent and quality. The Pixel 7 will be supported for a long time to come and is half the price of an FP5.

Yes, it’s unbelievable, but it’s true! Everyone is dancing to Goolag’s tune, including public television with its mediathek apps, for which citizens pay fees.
I only use public transport and my bike to get around town. I use an annual pass printed on paper: order once, pay once - but not via app.
Side note: If you happen to be closer to the East of Belgium, there is our Fairphone user group in Aachen (Aix-la-Chapelle) right behind the border: https://aachen.fairphone.community. A couple of us (including myself) are using /e/OS on our Fairphones. – But then again, there are also “Fairphone Angels” in Brussels and Ghent.

The “normal” G…-dependent Android is fed with apps via the “Google Play Store” (more or less similar to the Apple-App Store).
eOS provides a built-in App (App Lounge) that basically delivers the same apps of that “normal” store w/o the need to log into a G…-Account - thus in an anonymous way (I am simplifying a bit: this may sometimes harm the function and that´s why the threads about banking apps and microG exist - linked by @piero)
App Lounge also provides FOSS-apps from the Fdroid-“store” (which can be installed separately as well).
Aurora Store is an alternative source for “Play-Store”-Apps (every once in a while struggling with the same restraints thrown in by G… as they don´t like that privacy-approach…), it can be installed via App Lounge or via Fdroid.
In case the same function is available, FOSS is always the better choice because of better privacy, less to no tracking etc.
Yet still sometimes one simply depends on non-FOSS-Apps for reasons and in that case it is good to make an informed decision as (in many cases) least some of the trackers etc. can still be blocked w/o breaking the function of the app (which might take a little tinkering sometimes…)

It should be noted that the built-in /e/OS Advanced Privacy prevents several trackers in apps to connect to the internet, see Advanced Privacy .
It does a decent job IMHO.
You may also take a look at https://trackercontrol.org/, whose full version is available on App Lounge. It seems to block even more trackers and simulates a VPN to control all internet connections of the device.
As an alternative, you can also take a look at https://adaway.org/, which can also be used on non-rooted devices thanks to the VPN trick and where you can choose the anti-tracker lists.
EDIT: It would obviously be better if all apps did not include trackers, or you could choose whether to share usage stats etc. or not.
May I point out that App Lounge can use Play Store and F-Droid apps. The Play Store version is only analysis and has no blocking functionality, F-Droid version (I think it is the same as GitHub) is the full version.
Correct. You can find the open source version by searching for “TrackerControl” (without space character). You may also restrict the search to open source apps to make sure to find the correct one.
