I have Android S e-1-8-1-s-dev installed on my FP3 and I have some issues (phone sometimes freezes for some time).
Now I want to install Android R e-1.8.1-r-stable. Is that possible without loosing all my data?

No you can not. A downgrade is not possible. You need to backup and restore.
Stable channel for FP3 is moving to Android S, probably when /e/OS v1.9 is released, so maybe it’s better to wait a couple of weeks…
