I’d like to install /e/OS on my FP5 but the official OS say Android 13 and the community OS says security patch is “2025-01-01” instead of the current Android "2025-01-05.
Which one should i flash ? I have Android 14 and my late security patch is “2025-01-05”

In short terms: None of them or you will brick your phone. At least, as far as I understand it, if you want to lock your bootloader after installation. This is due to the anti-rollback feature.

I also don’t want to commit myself to the idea that the problem can be avoided by leaving the bootloader open. You can find several discussions about this in the forum, which I don’t want to get into. Just use the search function! 
By including “late” I think you realise the issue.
This link Android Security Bulletin January 2025 seems a bit more upfront than in past months about the development of SPL dates.
The 5th of the month date has been “the normal” (in a way) but the changes seem to develop during the early part of the month.
We will all have to accept that the rollback index is governed by date.
