I’m interested to know when murena moved to android 15. I don’t want to hard rest phone too many times.

Perhaps you don’t need to in any case …
If I understand this correctly, it refers to the policy from older times when /e/OS tended to be available in more than one Android version per device in parallel … which now would seem to be coming back.
So, as long as security updates continue for your current Android version, you could just stick to it, even if the next Android version would already be available.
Else … if you did one necessary reset to switch to the official builds now instead of running community, then there would be a good chance for your Fairphone 5 to get OTA upgrades to new Android versions via the updater in the future, and you wouldn’t have to reset (assuming the OTA upgrade works correctly). OTA upgrades are only being made available on stable/official builds.
Android 14 is out in these realms here just now, Android versions come every year … so, you could expect Android 15 in a year.
This guess is as good as any other date you might get, software development doesn’t handle fixed deadlines very well
