I’m currently stuck with iOS 16.7.12.
I dont know if it’s possible cause I haven’t seen any Apple phones so far…

More seriously, you can have a look at PostmarketOS device list, you will have more chance to build an Open Source Operating System for an apple device.
(most advanced port seems to be for the iPhone7)
