Does someone know if Meta downloads all your pictures from your gallery when you allow them to access it in regards to use of instagram and facebook ?

In theory, this might be possible, but since Meta’s apps are not open-source, you will never know exactly.
Just assume that these (ad) companies are doing everything they can to collect as much data as possible in all sorts of ways.

As far as i’m concern, i hardly send pictures, and i do not allow them to access my gallery. And when i do so, i remove it just after sending the picture, in my mind doing it quickly will prevent them from accessing everything 
But yes, they probably do so… You should check their privacy policy.
Perhaps it is also best to view Instagram and Facebook only in a browser (over which you have control), rather than installing the app that requires huge premissions (over which you have no control in most cases).
