Thank you for the /e/OS 2.0 launch event and all the work you put into this new version! It’s amazing to see how this project evolves.
Since I was not able to join the live event and ask my questions there, I want to try it here: could you please write some sentences about passkey support in /e/OS?

No immediate plans for passkey support. Will update if the team comes up with any plans in the future .

Passkey is a new name / specific variant of FIDO2. So the question is rather, wherher /e/OS supports FIDO.
As far as I understood it, /e/OS comes with microG preinstalled. and microG started to support FIDO in the last year. This might be a good starting point:
