Is there a chance to change the pattern on a /e/ Rom to 6x6?
If not, do you know why?

No, no change
Why? 3x3 is AOSP and /e/ is not modified in that case
3x3 is complex enough
It depends which Android Version you are based on.
I have Android 10 (q) and I can change it under
Security → Screen Lock → enter pin to continue → Pattern
There I can choose pattern up to 6x6.
