I’m using a Fairphone 5 which was bought from sky with the latest version of e/os. The Sky website shows recommended APN settings, but it needs two APNs enabled (which I can’t do), and settings which aren’t options within the APN settings.
These are the recommended settings:

APN Type:** Default
If I am reading it correctly, as far as I understand these are alternatives as far as APN settings. You are correct 2 APN settings will not be possible.
The internet option will clearly not bother with MMS. If you select the MMS option then they are expected to ensure this fully works and mobile data should be fine.
You might also check whether your plan allows “free choice” of either.
One would use the + top right of APN page. Ensure you have a good Wi-Fi connection while entering the data, Save of partial data will likely fail, the full setting may be checked / verified before a Save can proceed. You may then have to take a subsequent Select of the newly written APN.
The settings which aren’t available are the MCC and MNC settings, I will try with all the other options from the MMS APN. Annoyingly I live in an area without mobile signal so I will have to wait until I’m out tomorrow to test them.
