I am currently preparing to move over to /e/OS. But there is one thing I don’t quite understand. Will it be okay if I only download my banking app and a government authenticator app from the aurora store? will this give google a way to identify me?

There are two ways to use the Aurora Store. One is “Anonymously.” This simply downloads Play Store apps to your phone. They may work or may not. (I have two banking apps and my insurance provider’s app on my phone, each works without issue).
You may, however, choose to login to your Google account while using Aurora Store (which I believe allows you to restore purchases). I’ve never tried this as I share your fears.
