Of course you could … but why compromise and not use a privacy-respecting service instead, like murena for instance

I am a Thunderbird aficionado btw, using it since the early days. Can I keep doing so without privacy risks?

Not sure what’s your point, the mail-provider and the local client/app are two different things.
On your phone: you can use the integrated mail app which is a fork of k-mail which is rebranded thunderbird (or vice versa - to put it very simple) + you can use the integrated contacts and calendar app.
They can be synced to more or less any provider that supports imap and carddav and caldav (and probably further) protocols once these services are set up in the eOS- integrated account manager (which is a fork of davx5).
But you can install any other mail/contacts/adressbook-apps that you like and sync the server-hosted content via accountmanager or the app itself (depends).
AND you can move all your g**gle hosted mail/contacts/adressbook to another provider that respects privacy and take it from there.
Murena offers a free account that would do the job but there’s other providers out there too.
I started in the 90ies with Netscape Navigator/Communicator and on the way have used K9 till development stopped and it became ThB.
My provider Freedom.nl originated from XS4ALL, now KPN.
XS4ALL was one of the first providers in Holland —and a strongly privacy-oriented one. Freedom.nl continues that tradition.
The free Murena account is a good option.
