You can either hold POWER + VOLUME DOWN simultaneously, or hold POWER and then select “Screenshot” from the four options offered. The latter option is also available from the quick settings (swipe twice from the top to find the “power off” icon in the lower part of the screen).

I’m on /e/OS 1.10-dev S (Android 12), in lower Android versions the quick settings way isn’t available yet.
