Knowing that some apps “communicate” with each other or detect other apps installed on the phone, Graphene OS offers several profiles to isolate apps.
Does e/OS offer this kind of option to isolate apps and prevent this kind of tracking?

you mean “private spaces” as mentioned here and here? it’s there from >=AOSP15, but you’ll need for BlissLauncher to offer the integration as interaction to the end user. Currently it’s disabled, I guess until the UI interactions get a concept? ask in the weekly dev updates if there’s a plan.
As for apps that “communicate”, do you mean the recently discovered “Local Mess” webrtc spying scheme that meta and co had going? as what the Security model of Android allows is Apps signed with the same key to have some allowed intra functions
