Samsung phones don’t have any VoLTE support if you’re not using the stock ROM, so if you’re in a country or you travel to a country where switchoff of 3G network has occurred, e.g. UK, then you won’t be able to use it for phone calls if you flash it with a custom ROM.
Is this an official list? It is worth mentioning that I am not an expert in custom room installations. I’m just an ordinary person.
Are you telling me that e/OS does not have support for 4G and 5G connectivity?

better is to choose a device from /e/OS list Smartphone Selector (don’t yet include android 14 devices)
or from lineageOS list Devices | LineageOS Wiki (yet include android 14 devices)
eOS doesn’t support VoLTE on Samsung devices which means no voice calls if 3G network switched off where you are and only 4G networks available. I’m not sure about 5G voice call support on Samsung and even if eOS does support voice on 5G, depending on the country you are in, 5G network coverage can be very patchy so if no 5G network capacity was available in your location at a particular time the fallback option would be VoLTE which isn’t supported. If you search the fourms for VoLTE you’ll see a lot about the problems with Samsungs.
