I have a Mi8 Dipper Q version with Android 10, I would like to switch to S version. I read in the guide that I must first update the firmware to Android 12 but the Xiaomi website has the latest firmware stopped at Android 10. How can I do it?

Firmware should be from the same Android version, or latest previous version if none available for 12.
So, you may try with your current firmware. I have 2 devices running Android 12 with Android 9 and 10 latest firmwares 
BTW, link to latest global firmware for your device: Mi 8 Global Firmware V12.0.3.0.QEAMIXM Update | Xiaomi Firmware Updater (it’s for Android 10).

Don’t know about direct upgrade from Q to S.
I’d take the safest path, one version at a time…
