What are decent EU-based dedicated hosting providers at the moment you know?
I can recall Mydreams.cz as the one and I do like what they can offer. What host is better from your views?
But what are other options here?

I have used OVH’s cloud computing resources for on-demand access to vitual servers, and their service has been excellent.
The also do dedicated servers, which I have not used. (That link is to their English language pages, but I believe the company is based in Paris, and they have servers in several EU countries.)
OVH historical officies are in Roubaix, north-east of France

For information /e/ team recently migrated from OVH to Hetzner.
I also have some subscriptions @Hetzner (but no dedicated server), I’m very happy with their services.
Well Roubaix is near Paris
I used Ikoula in the past, and wasn’t disappointed. I only tried the web hosting solution.
They are based in France and claim to be “eco-friendly”.
