Help! I am an Apple user but want to switch over to something more eco friendly and more secure but have several apps I need for work like slack, Kasey one Authenticator, does this have those? Can anyone who uses it tell me what they think about the phone in terms of privacy and security?
Slack will work, all chat apps will. Banking Apps can be an issue as Google pushes for their device attestation solutions (“PlayIntegrity”), it’s a bit of a cat+mouse game for that category. As with that 2fa auth app I can’t test fully without an account to fill in, but it’s available and starts, I’d expect it to work.
Hard to say if /e/OS is mainstream ready, rule of thumb is some sacrifices need to be made, checkout FP6 tagged posts. Apple will always have higher polish and deep integration. Are you motivated to go through migration docs?
In the forum we don’t see the silent group where everything works out for their needs. Technical users can install it on some older secondhand Pixel to trial before buying new / from the store to see if it’s for them.

For apps working (or not) these lists might give some orientation. But be aware that status for individual apps is not always kept up to date.
As for 2FA TOTP I use FreeOTP+ - on FP5 eOS 3.2 A15, but this is independent from hardware. Worked so far with all 2FA services I used incl. Microsoft.
Okay follow up question what about apps like Goto and any apps for audio books like Libby? I’m wondering if maybe two phones is the solution.
