I still need gmail but would prefer to run it through a place wjere it is only signed in when in use. Do i 'eed thunderbird or fairapp or aquaapp? And how to set up? Thank you.

My memory is hazy because it was a long time ago, but I think at one point I set up Gmail for IMAP/POP and used an email client to access it.
You should be able to fetch your Gmail with any email client that supports the protocol. The client needs to use your Google credentials to fetch your mail, but that should keep you insulated from a proper Google login.
You have to log into Gmail with a browser to set up IMAP/POP since it’s not enabled by default, but then you can log out after that.
