i forget to ask what version of redmi note 5 you have? global or indian? if indian (with Pro in its name) previos link wwith fastboot rom will not work, you can search here https://mirom.ezbox.idv.tw/en/phone/ its not officiall website, but links for roms are oficiall.

I know, I also suffered a lot trying to find latest Fastboot ROM for my device when I bought it, what a mess of names Xiaomi did 
Pie -> Oreo or Nougat does create issues . Had a similar experience while testing on the Xiaomi MiA1. Sim not getting detected. Had to revert to Stock Pie and later test /e/ Pie ROM.
Finally! After a lot of trial and error found Oreo based miui then flashed /e/
Sim and camera working.
I will post about the overall experience in a month or so.
