Samsung Galaxy S10 and installation from Linux

These might sound as stupid questions, but I have came to a moment when I want to get rid of anything google-related in terms of spying, since even messaging friend about electricity connections, next thing I know - Temu offers to buy cables and pliers.

The question is - with no real experience of doing anything besides sliding buttons on and off in phone settings - how possibly hard could this get?

And then the very dumb questions - could I still have Whatsapp installed (I know this contradicts my wishes, but …), for example? I can live without FB, without Chrome (Brave user here) and other nonsense, if only couple of games, maybe…

I got SM-G973F/DS S10 phone, and at home all the computers run Arch Linux (different types of distro, but that shouldn’t be a concern, right?
